Senior Sensory Scientist

About the opportunity

Joining Vow as one of our first Food Science hires is an incredibly exciting opportunity. You’ll be given a blank slate and total creative freedom to take biological breakthroughs and turn them into seriously-good food products. This is more than just replicating the meat we have today, it’s completely redefining food from the ground up, and ultimately producing irresistible products for billions of people. 

You will have access to expansive labspace, a brand new, kitted-out test kitchen and have the opportunity to bounce ideas off our network, which includes some of the smartest minds in science, food and business. You will be able to take total ownership of our food formulations, taking new concepts all the way from idea, to product-in-market. 

We are looking for someone who is obsessed with how our human senses create individual experience. As Senior Sensory Scientist you’ll be the subject matter expert and go-to person for all things sensory. You will develop and own Vow’s overall approach to sensory panelling and sensory analysis, uncovering the insights that other people miss, through a combination of quantitative and qualitative techniques. You will work with our Senior Food Scientist to become the product attribute experts and constantly improve the sensory outcomes of our products, be that flavour, aroma, texture and beyond.

What you'll do:

  • Develop an initial sensory procedure for an in-house sensory panel.
  • Provide sensory leadership for the company and serve as the key subject matter expert on our meat product organoleptic analysis.
  • Contribute to the direction we take in hiring our Food Science / Product Development Team.
  • Recommend and select the purchase and lease of equipment for the food science lab & test kitchen.
  • Develop and standardize sensory protocols to be used company-wide.
  • Research literature and existing innovations to transfer theory into empirical research in the lab / the kitchen.
  • Design, plan and execute experiments, gather and analyze data, document and report results, and make recommendations.
  • Conduct a wide range of analytical tests, sensory and consumer testing.
  • Leverage lab instrumentation like the texture analyzer, rheometer and moisture analyzer.
  • Iterate constantly on formulations, with both hands-on and digital tools.
  • Manage key relationships with external sensory and consumer testing partners.

About you:

Selection Criteria:

Required experience / skills:

  • Master’s degree or PhD in Food Biotechnology, Food Science or related fields.
  • 5+ years of sensory science or product development experience - ideally involving commercialising a product through the stages of bench, pilot, and scale.
  • Strong proficiency in sensory analysis technologies and techniques.
  • Fundamental understanding of meat, food or flavour science on a molecular level.
  • Ability to think and work independently and manage multiple projects.
  • Proven track record of innovative research and development projects in startup or similar environments.
  • Excellent written and verbal communication skills.
  • Good experience with project management.

Ideally you also have experience in:

  • Meat science, or working with meat products / meat analogues
  • Culinary, restaurant or fine dining industries.
